About Us ...

Global Pantry opened in 1996. The original idea was for a web store selling our packaged Indian mixes which were developed during years in the restaurant business. While looking for the perfect location for a small production facility, Susan found that one of her favorite spaces, 10 Calle Guanajuato, was available for rent. Suddenly the business concept took on a different scope! Why not make the product in back of the store and sell it prepared ready-to-eat in front? Pilaf was born! With a few tables inside and out (23 seats) and a menu that changed daily, Pilaf opened in September of that year. Our Indian Menu mixes were tested and packaged; we received our trademark, registered our domain name, and began to build the web site.

A few months later, on New Year's eve of 1996, a major flood sent over two feet of water swirling through the business, causing serious loss and damage and forcing a two month closure while structural repairs were made in the adjoining building. After that, two major construction projects took place right outside our door to replace lost bridges and restore stream banks. Despite it all, business slowly increased and in the summer of 2000 we moved the restaurant into it's own lovely new space in the remodeled historic Mason's Building next door. A few months later, we opened our Global Pantry Specialty Foods store in our original location, selling our own line of mixes, interesting products from the Middle East, Mediterranean, and India, and deli items from the Pilaf kitchen. Meanwhile, we continued to supply Global Pantry products to the local market through our distributor, Beardsley's Fine Foods.

As the business has grown, Susan has been joined by son Jay and daughter Sarah who handle bookkeeping and management tasks. We all look forward to serving you innovative and traditional foods through our web site, retail store, and restaurant. Thanks for visiting!
